The Radisson Hotel Bismarck offers a view of the old NP main through downtown. At the hotel, ask the staff for a room facing the tracks. I was there a couple of nights ago on a railfan trip around ND. I'd recommend the Radisson. The old NP depot is now a Mexican restaurant, and you can dine or have beers on the patio (the former platform) and see trains go by.
